I think it should have both, lets say you add a cam site. They don't have just one model they can have many models, and you want to track which model pays better it would be a nice feature to have. Hypothetically speaking you could make deals with each model for better % or it could come in handy where lets say you're advertising a local stripclub and you have videos of each model but the stripclub has a main advertising sponsor set.
It could come in handy in this scenario. BTW I hope you thought about a tracking system for it too
It would be nice to have even if it's implemented at a later time.

Another idea, if you do the per sponsor create a separate admin section where you can disable and enable videos for each sponsor.
Ex. fastcash sponsor and than have a drop down box with all the videos assigned to it, I think you can loose track easily if you start assigning videos and you have no idea what's what.
Just an idea.

the sub-category is a great idea, it can make your site look unique unlike every other site you see out there. They all have your typical pornh*b categories, personally I can't wait for it
