i've been trying to see where i can, in the future, edit the number of "Popular Categories" that appear on the index page
right now, 50 are showing
i am trying to see where it could be limited to 25 to show, or increased to 100 to show ?

You have to edit templates/your-template/extend/widgets/categories_popular.widget.php and change LIMIT 50 to LIMIT number
