When I do a Mass XML import, it will import, but the issue is that it will create links to those videos in "Categories" which I'm not sure why, I didn't set of them to a category, but still, its using the the first category to do this. I checked some more and I'm now at a loss on why this is is happening. Do I need to to create a category for each channel or am I skipping over something I'm doing from the Mass XML import.

Categories are automatically assigned if you have auto terms set, if not the first category will be selected. From your post i understand that you do not want categories? If yes, this is not possible, you need at least one category.
