Okay, so I'm thinking of buying a Verizon, T-Mobile, etc USB Network Adapter for 4G, so I can move quickly across the internet. When I begin my site, and I start grabbing and / or embedding videos, will that count as data I'm using from my connection (which would probably be a 5G limit), or would it only count towards the server?

The only data counted to your connection will be the traffic between your desktop/laptop/phone and your site. The traffic between your site (server) and the servers from where you download/embed videos will be counted towards the server.
