In Admin -> Video -> Config -> Thumbs and also in CSS style.css search for .video img {}

In the video config area I changed thumbnail size to width: 320px / height: 240px
I also updated style.css and it isn't working properly, now the images seem to be 240px wide, but not 320 px wide.

You didnt set something correctly. If you've set width 320 and height 240 in admin, thats what the thumbs will com eout (check yourdomain.com/media/videos/tmb/.../1.jpg). If the css has width: 320px; height: 240px; in the .video img { class it will work.
