I myself also switched from shared server to VPS as I encountered a lot of problem and it gives you a lot of errors from time to time especially when uploading video files.

I don't think it is possible. Website automatically detects if you are using a browser in your computer or just your mobile device which will make them switch to mobile version automatically even if you use a browser in your mobile phone.
